Direct-seed from late March to early July, 5mm-1cm deep in rows 45-60cm apart. Thin to 7-10cm apart. Tastiest after a couple of frosts. Parsnips can be difficult to germinate; seed thickly, water regularly, and keep new seedlings well weeded. Once established they’re unstoppable, and can stay in the ground for harvest through the winter. 14-21 days to germination, 110-120 days to maturity.
