For a beautiful, diverse harvest, direct sow seeds in a sunny location.
Planting: Plant seeds 1.25 cm deep and 2.5 cm apart. Sow in a sunny spot every two weeks from early spring to early summer, or later in summer for a fall crop. Germination typically occurs in 7-12 days.
Care: Once seedlings emerge, thin them to 7.5 cm apart. You can use the thinnings as a source of tasty baby greens. Beets make their best growth in moist, rich, sandy loam. Note that the vibrant colours and patterns found in the raw roots will fade when cooked.
